Another good one by Stevie Ray Vaughan - "Little Wing," original by Hendrix.
"Hallelujah" by Jeff Buckley is great too (original Leonard Cohen.

My favorite album of covers has to be John Martyns 'Church With One Bell', especially his version of Portisheads 'Glory Box' and Ben Harpers 'Excuse Me Mister'.
Dick Gaughan doing 'No Gods' by Brian McNeill
Christy Moore doing Shane MacGowans 'Aisling' and RIchard Thompsons 'Beeswing'
The Pogues doing Ewan MacColls "Dirty Old Town'
The Stones doing 'Just My Imagination'
